Cook everything at the table. Best in Kunming at Jian Xin Yuan, the oldest restaurant. Steam Pot Chicken is chicken steamed in a clay pot for hours. No water added. Just steam. Extremely tender. Found throughout Yunnan, especially in Jianshui. Rice Noodles with Cold Sauce works perfectly for hot summer days. Chewy noodles with sour sauce and peanuts. Street food everywhere in Kunming. Goat Cheese is Yunnan's version of cheese. Fried or grilled with sugar or salt. Weird but delicious. Spice warning. Yunnan food is not as spicy as Sichuan. But some dishes use fresh chili. Ask bu la (not spicy) if heat is not welcome. The best place to find these dishes is Kunming's Old Street area.
