What to Eat in Jingdezhen – Leng Fen, Jiao Zi Ba, Jian Shui Ba Jingdezhen‘s food doesn’t get the same attention as its ceramics. That‘s a mistake. The local snacks are excellent and uniquely Jiangxi. Leng fen (cold rice noodles) – Thick, chewy, served at room temperature with chili oil, pickled mustard greens, crushed peanuts, and a secret ingredient: dried tangerine peel. The citrus note is unexpected but works. Where to eat: Jing’s Leng Fen or Laoma Leng Fen near Taoyangli. Fuzhou Alley is also packed with small noodle shops. Jiao zi ba – Steamed rice cakes shaped like dumplings. Fillings include spicy radish with dried shrimp or mild chive with tofu. The wrapper is translucent and bouncy. Jian shui ba – Alkaline rice cakes, pale yellow, with a distinct mineral flavor. Best stir-fried with egg and pickled vegetables. Also worth trying: Yu tiao bao ma ci (fried dough wrapped around sweet mochi) and Niu gu fen (spicy beef noodles).
